Filet with Loaded Smashed Potatoes and Pancetta Wrapped Asparagus


6 ounce filet paired with seasoned roasted baby potatoes smashed and topped with crumbled bacon, sour cream and shredded cheese and a bundle of fresh asparagus wrapped in Pancetta.

Fresh asparagus lightly sautéed with sweet onion, Italian bacon, garlic, lemon juice and fresh basil then toss it with roasted red peppers, a touch of cream and bow tie pasta.

A nod to Hemmingway who was present in Madrid during the Spanish Civil War. Created by a bartender in Havana this is a Daiquiri reported to be how Hemmingway liked it. Made with Bacardi, grapefruit juice, fresh lime juice, Cointreau and Chartreuse
